Homemade Almond Milk

I do feel bad its been a while since my last post, but TIME  has been an issue this last months. I´m not planning on spending this time writing about why I´ve been so busy but I plan on telling you about one of my biggest findings this year!

Almond Milk has been a MUST lately and this week I discovered it can be easily homemade. Thats why I´m shearing this delicious and really simple (and of course no time consuming) recipe.

Ingredientes:

  • 1 taza almendras
  • 4 tazas (1 litro) de agua fria, más la que se usa para remojar
  • Splenda, azúcar o miel
  • Extracto de vainilla


Instrucciones:

  1. En un bowl mediano coloca las almendras con suficiente agua para cubrirlas todas. Déjalas reposar en agua por dos días dentro del refrigerador (entre más días estén dentro del agua más cremosa será la leche)
  2. Después de dos días, cuela las almendras y enjuágalas con agua limpia. Colócalas en la licuadora con el litro de agua y licuá por 3 minutos. Después agrega endulzante y vainilla al gusto.
  3. Cuela la mezcla con un colador muy fino o con tela especial. (No es necesario pelar las almendras porque se queda la cascara en el colador). 


Listo! Ya tienes leche de almendras fresca y natural. La almendra que queda en el colador la puedes usar en smoothies, avena o para hacer muffins, otra opción es deshidratarla metiéndola al horno muy bajo por un par de horas y puedes usar la harina de almendra para otras recetas, como mi pastel de almendras.

Acuérdate que al no tener conservadores la leche no durará por muchos días (máximo 5).

Summer Proyect

For the ones who doesnt know I´ve been lucky to find and amazing job which I been loving for the past months. Its an organization called Fundacion Legorreta Hernández (FLH) and my roll there is to help them design all kind of stuff that make their image look prettier, better and more profesional. I´ve been doing, publicity, stationery, catalogs, logos and helping on different needs they have every week.

I feel really lucky to be part of this co. that helps mexican people, and keeps me working and on the design track. I will leave you as well this amazing video of a great proyect we did this summer, showing 50 mayan children the magic of photography.

Sorry Its been a while since my last post, I've been really busy working on new projects one of which Id like to tell you about. FLH (Fundación Legorreta Hernández) its opening a magical store at Monte Athos where we are selling great organic and handmade products from Mexico´s southest zone.

I´ve working really hard to make this happened, and we still have lots to do but this is the first step so I wanted to show you the result so far. Im adding soon new posts and pics, so I´ll start using the sureste label.

From a sketch to a space...






As a designer there´s nothing more gratified than to see fisically something that started in your head. Its amazing to see a picture of something you planned for hours in your computer. Thats why Id like to share with you this babys room I designed for a friend. Though its not completly done and the pics are not that good, so far Im loving the resutl. What do you think?

Homemade Hummus



One of my favorite ingredients lately is hummus and after eating  this delicious middle eastern dip for several weeks and trying different brands to find the best one (so far Oblea its my favorite)  I decided to give it a try and make one my self. 

I have to admit I was surprised of how easy it was not only to make it but to find the ingredients, I found everything in a regular supermarket and you don’t always find hummus on every supermarket.

So I will start with an ingredient called tahini, some recipes said you dont really need this but I love the flavor and texture it gives to the mixture,  it is supposed to be easy to find but as I couldn't  found it I end up doing it as well. This is the recipe I use.

Once you buy or do this special ingredient the hummus is next.

Ingredients:
  • 1 can or 400g of chickpeas (its much better if you just buy the can, easier and better taste)
  • 1 tablespoon lemon juice
  • 1/4 cup of tahini
  • 1/2 garlic clove
  • 3 tablespoons olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper
  • 2 tablespoos water if needed for texture.
Procedure:

Another great thing about hummus its all you have to do is mix all the ingredients in a food procesor. That simple!

Now that I´ve learned how to do it I promise I will give you great recipes for things to cook with this great taste dip so wait for them.

Pinky Birdy Baby Shower

I design this cute birdies for my new nephews baby shower, I repeat my favorite recipe of cupcakes (carrot and cranberries)  but this time mini and my mom had the idea of serving them with yogurt, red fruits and granola. The result was not only pretty but delicious and healthy, a huge success.

Carrot and cranberry cupcakes




This is diffinetly one of my favorite desserts and this is an amazing recipe. I did this cute and delicious cupcakes for my little monkey´s first birthday party and it was a huge success. Here´s the recipe.

Ingredients:

CUPCAKES
3 cups grated carrot
2 cups regular flour
1 ½ cups sugar
2 tsp. baking soda
1 cup corn oil
2 tsp. cinnamon
1 tsp. salt
3 beaten eggs
½ cup chopped walnuts
½ cup cramberies or raisins

 FROSTING
1 large cream cheese room temperture
2 tbsp. milk
1/4tsp. vanilla essence
2 cups confectioners sugar

Preparation:

1.     Preheat the oven 350F and set cupcake pan with  the cupcake papers.
2.     Mix the dry ingredients (flour, sugar, cinnamon, baking soda and salt) add the oil and beaten eggs until getting a fluffy mix.
3.     Mixing with a spatula add the carrot, cranberries and walnuts.
4.     Put the mix into the cupcake papers and bake for 20 minutes.
5.     Let them cool down.

For the frosting:
1.     Mix the cream cheese until it gets softer, then add vanilla and milk until you get a soft mixture, then add the confectioners sugar until you get the texture you want. You can add food colorant.

Then decorate the cupcakes with the frosting and add your special touch I made the little monkey flags and add sugar with some orange colorant.
